We highly recommend shredding a whole milk low moisture mozzarella brick (like Polly-o) and NOT using a bag of pre-shredded cheese. Bagged pre-shredded cheeses use an anti-caking powder that burns and affects the taste. Tip: if you must use pre-shredded, rinsing it in a colander will improve your baking.
